This giant pumpkin-shaped cake will make a stunning showpiece on a dessert table at a big Halloween party. Since it is made from two bundt cakes, it definitely feeds a crowd!
Since most people have only 1 bund cake pan (and the recipe makes a large batch of batter) you will have to make this cake recipe twice.

Ingredients
Pumpkin Bundt Cake (single recipe):
- 1 cup (225 g) unsalted butter at room temperature
- 1 ½ cups (300 g) granulated sugar
- ⅓ cup (70 g) packed light brown sugar
- 4 large eggs, at room temperature
- 3 cups (450 g) all-purpose flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp ground nutmeg
- ½ tsp baking soda
- ½ tsp salt
- 1 ½ cups (375 mL) pure pumpkin puree
- 1⅓ cups (225 g) white chocolate chips
Buttercream:
- 6 large egg whites, at room temperature
- 2 cups (400 g) granulated sugar, divided
- ½ cup (125 mL) water
- 2 ½ cups (565 g) unsalted butter, at room temperature and cut into pieces
- 1 Tbsp vanilla extract
- 1-2 Tbsp (8-15 g) cocoa powder
