Maple adds a gentle sweetness to these cookies, a little milder than traditional molasses gingerbread cookies.
Ingredients
- Β½ cup unsalted butter, room temperature
- Β½ cup packed light brown sugar
- Β½ cup pure maple syrup
- 1 large egg
- 1 tbsp finely grated fresh ginger
- 1 tsp finely grated lemon zest
- 2 ⅓ cups all-purpose flour
- ΒΎ tsp ground allspice
- Β½ tsp ground cinnamon
- Β½ tsp baking soda
- Β½ tsp salt
NOTES: The cookies will keep for a week in an airtight container and can be decorated with icing or simply dusted with icing sugar.
